I don’t usually cook with berries, to be honest I’m not really a berry dessert sort of person but a couple of nights ago, we were looking for something to make and my kids pulled the frozen berries out of the freezer. Usually we only use them for our smoothies and green juices but they asked for blueberry muffins.
We threw these together and found them really easy to make. They are of course gluten free, dairy free, grain free and refined sugar free. We used 1/4 cup of honey but this could be left out and perhaps replaced with a banana. I didn’t have any bananas left so we opted for honey.
- 3/4 cup of coconut flour
- 1/4 tsp of sea salt
- 1/2 tsp of baking soda
- 1/2 cup of melted coconut oil
- 6 free-range eggs
- 1/4 cup of honey or maple syrup
- 1 tsp of pure vanilla extract
- 1.5 cups of mixed berries or berries of your choice
- 1/4 cup of desiccated or shredded coconut
Mix all the dry ingredients together in one bowl. Separately whip the eggs and add the rest of the wet ingredients. If you find it too dry, you can add some coconut milk as we did. Mix everything together and place into your muffin trays. I sprinkled ours with more coconut before placing them into the oven. 180degrees for around 30 minutes or so. Check them using a skewer to ensure they are cooked all the way through.
I love to serve these with a beautiful warm tea. My favourite teas at the moment are the Bodhi loose leaf tea range; my favourite is the SereniTea but the VitaliTea and the ZesTea is also beautiful. I really enjoy making tea for my kids too, they really like to be part of everything we do and I serve it in their own little special cups with our metal straws.
